Corned beef is one of those meals that just works—salty, tender, and ridiculously easy to make. When I saw Shenson’s USDA Choice Corned Beef Round at Costco, I knew exactly what to do: toss it in my Ninja Foodi with cabbage, carrots, and potatoes, let it do its thing, and boom—dinner was ready. No fuss, no effort, just simple, delicious comfort food.

    Taste & Texture

If you’ve had corned beef before, this is exactly that—salty, tender, and full of that classic briny, beefy flavor. The texture is soft and juicy, especially after slow cooking. It shreds easily but still holds together enough to slice if that’s your thing. The fat gives it extra flavor, so don’t trim it all off unless you hate happiness.

    nutrition facts

    How I Cooked It

    • Threw it in the Ninja Foodi – Because I don’t have time for stovetop babysitting.
    • Added cabbage, carrots, and potatoes – Classic St. Patrick’s Day vibes.
    • Cooked it low and slow – So it came out fall-apart tender.

    Best Ways to Eat It

    • Classic corned beef and cabbage – Because why mess with a good thing?
    • Sliced for sandwiches – Throw it on rye with mustard and boom, perfect lunch.
    • Leftover hash – Chop it up, toss it in a pan with potatoes, and call it breakfast.

If you’re feeling extra festive, pair it with Costco’s Irish Beef Stew for the ultimate St. Patrick’s Day feast. Corned beef for dinner, stew for leftovers—now that’s a solid plan.

    Location in Store

You’ll find this in the refrigerated meat section at Costco, usually hanging out near the briskets and other roasts.

    Final Verdict

Look, this is corned beef, plain and simple. If you love corned beef, you’ll be happy. If you don’t, well… this won’t change your mind. But for me? It’s an easy, comforting meal that I’ll happily make again.

Would I buy it again? Yep! Perfect for an effortless, delicious dinner.

Rating: ⭐⭐⭐⭐⭐ (5/5) – Classic corned beef, done right.
