    Chipwich Thin Mints Ice Cream Sandwiches

    Sometimes Costco brings in a product that’s just fun, and these Chipwich Thin Mints Ice Cream Sandwiches are exactly that. I spotted them in the freezer aisle on one of my usual “just a few things” runs (which, let’s be honest, is never really just a few things). As soon as I saw "Thin Mints" and "Chipwich" together, I knew these had to come home with us.

    The kids were excited from the second they saw the box, and after trying them, it’s safe to say they’re a hit in our house.

    Taste and Texture

    If you’re a Thin Mints fan, these taste exactly how you’re hoping. You get a layer of creamy mint ice cream sandwiched between two soft chocolate cookies, and the outside is rolled in mini chocolate chips for even more texture and sweetness.

    The cookies are soft enough that they’re easy for kids to bite into, but they still hold everything together without crumbling into a mess. The mint flavor is cool and fresh without being too strong or toothpaste-like — which can happen sometimes with minty desserts. These are sweet, chocolatey, minty, and really satisfying, especially on a hot day.

    How We Enjoyed Them

    I mainly bought these for my kids, but of course, I had to try one too. We had them as an after-school snack one day, and they disappeared fast. The kids loved the combination of the mini chips on the outside and the soft cookies. It’s not messy like some other ice cream sandwiches, which I appreciate, especially when you’re handing them out quickly and trying to avoid a full kitchen cleanup.

    They’re also really easy to grab for birthday parties, sleepovers, or just because you want a treat stocked in the freezer that doesn’t require scooping, plating, or much thought.

    Compared to some other frozen treats we’ve tried, these definitely feel like more of a “special occasion” snack — but they’re so good, it’s hard not to reach for them more often.
