    Costco Sushi Bake

    Let’s talk about Costco’s Sushi Bake, because as soon as I saw it in the refrigerated section, I knew I had to try it. I mean, anything with "sushi" and "bake" in the name is bound to be interesting. And while I wouldn’t say I regret trying it… I also don’t think I’ll be tossing it in my cart again.

    What’s Inside?

    This is a pre-made sushi-inspired casserole, found in the refrigerated meals section. The top layer is golden and baked, and underneath, you’ll find a mix of imitation crab, rice, mayo, and seasonings—basically a deconstructed California roll in warm, baked form. It comes in a foil tray, and all you need to do is heat it up in the oven or air fryer.

    It’s fully cooked, so you’re really just warming it through. But here’s my tip: make sure you grab a tray that hasn’t been flipped upside down in the packaging. Ours looked like it had done a somersault at some point, so everything was lopsided and a bit smushed. Not a deal-breaker, but kind of annoying.

    Heating and Serving

    I followed the oven instructions—about 25 minutes at 350°F—and it came out warm, slightly crisped on top, and very fragrant (in a fishy, creamy, sushi-adjacent kind of way). You could also heat it in the air fryer for a quicker, crispier finish.

    It’s meant to be eaten with a spoon or fork—no rolling or dipping required.

    Taste and Texture

    The flavor is... interesting. It’s definitely imitation crab-forward, with a rich, creamy texture from the mayo. There’s rice in every bite, and the top layer has a slightly baked crust that gives a little contrast.

    If you’re expecting something sushi-like, you might be surprised—it’s more like a seafood casserole than anything you’d find at a sushi restaurant. The flavor isn’t bad, just very rich and a bit sweet, which may not be for everyone.

    My kids actually liked it, which I didn’t see coming. They said it reminded them of “hot sushi,” which is both accurate and not wrong. I had a couple of spoonfuls, but the flavor got a little too much for me after a while.

    What I Liked

    ✔️ Quick and easy—just heat and eat
    ✔️ Kids were into it
    ✔️ Nice if you like imitation crab and creamy textures
    ✔️ Can serve with seaweed, cucumber, or a simple salad
    ✔️ Kind of fun to try once

    What I Didn’t Love

    ❌ The flavor is rich and a little sweet—not super balanced
    ❌ Heavy on imitation crab
    ❌ You really need to check the tray before buying—ours was squished from being flipped
    ❌ Not something I’d crave again

    Location in Store

    Look for it in the refrigerated meal section, near Amylu Chicken Meatballs and Teton Waters Ranch Polish Sausage. And again: check the tray orientation before tossing it in your cart.

    Final Thoughts

    Costco Sushi Bake is definitely a unique option. If you love imitation crab, creamy textures, and want something quick and different, it’s worth trying once. It’s not something I’ll buy regularly, but I’m glad we gave it a shot—and I was honestly surprised my kids liked it.

    If they come out with a version with real seafood or a different flavor profile, I’d probably be first in line to try it.

    Fun to try once, but probably not a repeat buy—unless your kids ask for it again.
